Apple Cinnamon Muffins

This muffin recipe is so delicious! It is on the sweeter side, but the contrast of the sweet with the Granny Smith apples makes it the perfect apple cinnamon muffin recipe

1 tsp baking powder

1/2 tsp baking soda 

1 cup sugar

1 stick butter, grated

2 large eggs

2 Granny Smith apples, peeled and chopped

1/2 c half and half

1/2 tsp cinnamon

Streusel topping:

1/2 c brown sugar

2 tbsp flour

2 tbsp butter 

1/2 tsp cinnamon

Preheat oven to 375F Mix together dry ingredients. Grate in butter and smush into the flour with your fingers or a pastry tool. Add eggs, half and half, mix until it just comes together and scoop into cupcake tins. Top with your streusel topping, made by smushing butter into the dry ingredients. Bake at 375F for 30-40 min
